Good to the last drop

 


Still celebrating ...
my March birthday, that is.  I've 3 more days!


Yesterday we'd made plans to visit a new(ish) restaurant.  So excited to see a prime parking spot right in front of the doors -- until I spotted:
"Open 3-10PM."   


Our last couple of visits to Olive Garden have been less than stellar ..... but this was Tom's turn to pick. Plus I was on the verge of getting "hangry."

Fortunately, this time both our dinners were delicious!  Learning Tom's prior entrees were 'dry' our server brought out not one, but two extra cups of Alfredo sauce.  Score!

Later , I got on the net and discovered this copycat recipe for Scampi Sauce that's not only keto-friendly, but I think will pair well with chicken.

Scampi Sauce

2 sticks butter
2 T. crushed real garlic
2 T. chicken stock
3/4 c. white wine
1 t. crushed red pepper
2 T. Italian seasoning
Black pepper, to taste.

Heat butter slowly.  Add garlic and Italian seasoning and red pepper on low heat for about 2 minutes.  Add the wine, water and chicken base and stir until combined.
Optional: Add white sauce and stir until slightly thickened. 





So, today turned into a 3-cup of coffee morning.
That's not doing my essential tremor any favors, but I'm not especially concerned.


What I am a bit concerned about is my lack of discipline.  Does anyone else keep envelopes full of scribbled thoughts, hoping they'll grow up into posts?



 
What I did want to share ... something that came up in my memories.

Any fans of Ree Drummons (aka, Pioneer Woman) in the audience?
Here's her 'Crazy Coffee', based on something called 'Bulletproof.'

12 oz. fluid strong coffee, very hot
1 Tablespoon coconut oil (unrefined)
1 Tablespoon cold butter (unsalted)

Place all 3 ingredients in a blender and blend until emulsified, about 10-15 seconds.  It will look like very creamy coffee.  Pour and enjoy!


I know it sounds bizarre.  Maybe even a little ick.

All I can say is that you need to try it.  Just once.

Some people say it gives you an energy boost like no other.  I don't know about that, but I do know it's delicious.  Especially on a dreary rainy Saturday.

  1. Hmm ... that's an interesting concept for the coffee. I don't think I could handle 3 cups of coffee nowadays. The tummy just can't tolerate it any more..I know my Swedish ancestors are aghast right about now ... haha ...
    I'm glad you are still celebrating the birthday. Why Not? Happy to know that your meal at Olive Garden was better. Good for your waitress solving the problem.

  2. Delete my posts because I'm not the same person I was 4 minutes ago - - wow, I can REALLY relate to that. Every time I think I wrote a great post, I'm ready to delete it after rereading.
    Kall me krazy, but I'm a fan of the Pioneer Woman, who is probably a multi-millionaire. I bought some of her dinnerware and mugs - - because they are colorful and appealing - - not like the Walmart crap.

  3. I know what you mean about Blog posts and keeping notes. My thoughts for a post can happen at any time - whilst driving, in a taxi, or cooking etc ... As soon as I get to a computer I write them and keep them in reserve. Right now, I have about half-a-dozen posts written and not yet published.

    That restaurant meal sounds delicious. I might try the sauce recipe.

  4. thecontemplativecat here. For my brilliant random thoughts, I keep a journal and if I run really fast I might still recall that post. Like Victor, I write a few future posts and have them in the lineup. I love the post-it above. so true. Also, caffeine is off my list most of the time. Migraines.

  5. I wouldn’t be able to handle that coffee. Between IBS and those occasional bouts of diverticulitis, it’s hard for me to experiment with new foods. Bummer!
    I resemble the last image on posts! I do that all the time! 😜

  6. Way to go on still celebrating your birthday. Sorry that the restaurant was not open but that you had a nice dinner at the Olive Garden. Up, that's a lot of coffee. No, I have no notes for posts. Let us know about the coffee you're going to try.

  7. Happy prolonged birthday celebration! You have two more days now to celebrate, and why not? You've been growing up into this wonderful age for you and I know how long, so why not celebrate it? I'm taking notes for when I reach the same wonderful age later this year. However, I won't be celebrating with coffee. That's one thing I cannot do. Tea maybe, but not coffee. Sorry. I hope you will still make it to the other new restaurant sometime, maybe an early supper when they open at 3:00. We call that "lupper". LOL. I haven't been to Olive Garden in ages. We don't have one near us, and it never was a favorite of mine anyway, but if I had one near I would definitely visit it occasionally for that special soup and salad and bread sticks lunch. Do they still do that? That was always a winner for me. I love the quote. No, I don't keep little envelopes or note pads sitting around with blog ideas. I just kind of write whatever pops into my head when I sit down at the computer, and also based a lot on whatever pictures I have to share. They kind of dictate the story. I used to think more deeply and plan more thoroughly, but my brain just isn't into that anymore. LOL. So what you see is what you get. Have a lovely rest of your birthday celebration. Cheers!

  11. I just love my morning coffee, black and strong, Myra. Don't think I want to experiment any time soon, but do appreciate your info on the matter. So glad that y'all's meal at Olive Garden was more than enjoyable, too. Keep celebrating, birthday girl! Blessings!

  13. HAPPY BIRTHDAY AGAIN! Glad you are still celebrating.
    Sorry your new restaurant was not open, but sounded like Olive Garden had your back. They are advertising here about buying a meal to take home for $5 to $10 I forget now.
    I have heard of people putting butter in the coffee - not the coconut - what does it do for you, and do you have to blend it (then you have to wash a blender - lol) - wonder if you can just stir it?
    I don't keep paper notes about blogs - but you should see my files on the computer! lol

    1. Yes, they're still doing that; a couple at the next table got their 'extra' meal to take home. I don't bother pulling out the big blender and just use my hand-held, using only one beater. (Got that tip from blogger 'Ma' instead of buying an expensive immersion blender.)

  14. Yay for extra sauce and a happy lunch out.. no wonder there was a place by the door. ha ha

    I leave scribbles in 3 rooms, then can't remember the details ... what I have been doing lately is grab the laptop, put FBI police car in title of post in drafts, type a few details and a week ago I realized I had 10 in drafts and 5 of them were Ideas not posts. you will see the one above coming soon on my blog.
    I have found the posts I do and hate and leave in draft for just in case, because I really don't like it, and when I post because I am desperate it gets more comments than the other. own worst enemy.
    Like Debby IBS will not let me try anything. if I step off my food list, like day before yesterday I ate 1/2 of a Cuban sub and all day yesterday I paid the price, it was a miserably day. if I drank one cup of this coffee it might last 2 days

  15. I love my plain black coffee, but sometimes indulge in different flavors. I got one once that had a coconut flavor and it was good. I love the Pioneer Woman's recipes. But won't be trying out the coffee. Glad we have 2 more days to celebrate our March birthdays! Today I'm going out shopping with my daughter which is always fun! It's not going to rain here.. Saturday was beautiful and sunny, today is a bit cloudy, but no rain. Enjoy the next 2 days! Love, ma

  16. I've heard of a lot of people who add butter to their coffee.(I've never tried it) but I haven't heard of the coconut oil.. Let us know what this does for you. Gurl...I am notorious for stuffing little sayings, quotes or things I have come across, away for a blog post. I don't think I ever use them. LOL. Your meal sounds good and it is so good to try new places. We have a new Italian restaurant here in town. It's good but if I'm comparing it to Olive Garden, I would give it a 7. Enjoy the rest of your birthday month.

  17. Yes!! Sometimes I really am not the same person I was a few minutes ago! That is so true. Yes, I jot down ideas for posts and then lose interest in that subject. I add cinnamon to my coffee as it helps regulate blood sugar.

  18. Happy Birthday. I get that about eating places. Some times I go to a place and it's real good and then the next time, not. I have that happen to me with coffee houses too.

    2. I get that. I tried for the first time today, Chipotle. My sights were low on this one and really, I got a veggie bowl and enjoyed most of it. Not the rice though. I only got a small spoon of both their rice and for me, pass. the black beans and the corn, I LOVED. Have a groovy week! Cheers, Ivy.

  20. I have a host of draft posts, almost one for every finished post. Some of them just need a paragraph and some editing, but I run out of steam. Hoping to move forward more this year and not run out of steam.

  21. Hahaha I am a huge coffee drinker so I will have to try your recommendation. I am actually going to set up a little coffee bar in our kitchen after we have our cabinets painted this month. I will let you know how it goes! Thanks for sharing!!!
