I was really looking forward to enjoying grilled chicken breast and asparagus today. When we got home from church, however, Tom discovered the chicken was still partially frozen.
No worries, I'm a champ at foraging. While he made a fried bologna sandwich, I examined the left-over shredded chicken. Perhaps freezing it wasn't so wise, because the result (pictured above) wasn't so palatable. The addition of olive-oil, Marie's bleu cheese, hard-boiled egg and tomato did little to improve its taste. But ya, I ate it.

I remember the former coworker standing before the canteen vending machine: "How lucky are we? Adults can have a candy bar and call it lunch/supper."
Lately, I've been on a popcorn kick, strewn with garlicy olive oil. I love the variety of flavored oils on the market, but they can be pricey. I discovered mincing fresh garlic cloves and adding them to an ordinary (store brand) bottle of oil is just as tasty.
UNfortunately, I doubted the InstaPot instructions and set the timer for 5 minutes v. 1. I'll spare y'all the image, but the resulting dish reminded me of the name of a 1973 Charlton Heston thriller.
(Melted butter makes everything better; it was still yummy.)

LOL. I love your stories. In my test kitchen? Hmmm, well, honestly I can't think of a thing. Most everything I cook I've cooked before. I did make a cheesy pasta/diced ham dish the other day. It turned out pretty good considering I didn't have enough of one kind of pasta, so I added another kind (shape) of pasta to make enough and ended up with way too much. I sent some home with both Benton and Rose and also Scott today. I may still have some plain cooked pasta in the fridge waiting for me to do something with it. Probably end up in the trash if I don't hurry and figure it out. How long can you keep cooked plain pasta??? So, that would be my test kitchen item this week. Thanks for the ideas! have a good week.

DeleteI keep forgetting about it. It's still there. I just can't seem to think up anything I want to do with it. I really am not wanting to eat much pasta these days. It feels like it blows up inside of me and makes me rather uncomfortable...so it may go bye bye. There isn't more than about a cup anyway.
DeleteSoylent Green!! Ha! I would have thrown a little cheddar in with the 'melted' broccoli and butter. Unless it would make me sick, I go ahead and eat it, to answer your question. When I have chicken breast that isn't completely thawed, I just slice it up and stir-fry it. That usually works fine for my needs. Wishing you blessings in the week ahead! xo

Let's see I made a pot of vegetable soup - put everything in it fresh in it and a big cabbage and navy beans. It was delicious, but there is a lot of it - and am eating it every day. lol
I want to do something like that too, once the weather cools.

ReplyDeleteYou are right about making your own garlic flavoured oil. Over here olive oil has suddenly increased in price enormously.

DeleteReal Butter is the best! Slathered on anything makes it palatable. Sounds like that mushy broccoli could have made a great soup base.

This week our son is in my test kitchen, he's done great. I try not to be wasteful and do much better at eating almost anything, notice I said, almost. Mr D not so much, he doesn't even like to look at something he doesn't like. He's missed out on a lot of good food. lol just sayin'.
