What's your favorite thing about this time of year?
These cool mornings are the best!
Too, the falling leaves. They present a mess; I have to vacuum every day ... but they intoxicate my senses.
Have you visited any 'falls' in person? Tell us about one of your favorites? Of the following top ten famous falls which would you most like to see in person-
Victoria Falls (Zimbabwe/Zambia), Igazu Falls (Argentina/Brazil), Niagara Falls (US/Canada), Angel Falls (Venezuela), Yosemite Falls (California), Dettifoss (Iceland) Kaieteur Falls (Guyana), Plitvice Waterfalls (Croatia), Gullfoss-Golden Falls (Iceland), or Sutherland Falls (New Zealand)
I'm going with Niagara Falls (US/Canada).
#1, because I don't have to leave the Country ..... and #2 I don't recall much from my first visit in the '50's. I only remember being fascinated by tales of those daredevils who chanced going over the Falls in barrels.

A favorite fall recipe?
I don't know if this qualifies as a favorite; I'll making it for the first time later this afternoon. It reminds me of something I used to love while living in West Texas.
Frito Pie
Line the bottom of your slow cooker with 2 bags of Fritos
Cover with 1# (est.) browned loose meat (chuck)
Add 2 cans Enchilada sauce
Fold meat and sauce. Gently, so as not to break the Fritos!
Spread 1 can refried beans across the mix
Sprinkle with onion (to taste, I'm using 1/2 lg. white)
Sprinkle that with green chiles (or not, depending on your taste buds)
Cover with 1 packet Taco Seasoning
Cover with Mexican style (or cheddar) shredded cheese
Cook on 'high' for about 30 minutes
... and scoop to serve!
I'm going to add a dish of sour cream on the side, perhaps jalapenos for those who'd like.

I seriously need to make time for my lady friends.
Sharon keeps asking to come over for coffee and Cindy's always up for lunch.
Not having had the in-person company of like-minded 'girlfriends' since 1970-something, they're a blessing!

DeleteMy friends are a mix of retired and still working but we make a point to get together for lunch once a month. I won't miss summer either, it's not my favorite season other than the longer days.

DeleteEcho Loudly not a darn thing will be missed about summer. I am a winter person but only in Florida. I saw Niagra in 1952 at 8 years old. I remember every scary thing that happened on that trip and none of the good things. I might do better at this age. alas, the falls will need to come to me.

Actually, the 30 min. was WAY too short -- then 90 min. resulted in it getting too dry. If there's a next time, I'll do less chips and more liquid at 60.
DeleteAutumn is slowly arriving here; it's a bit cool but not cold yet.
ReplyDeleteI never visited any of the waterfalls mentioned. But there's a small one in a swimming park nearby by. It's made of plastic and only six feet high and one can slide down it. That's the safest method for me. I tried to slide down in a barrel and got thrown out by the security guards.

DeleteI love your random thought! Anything with fritos sounds delish! I tried a recipe recently that was a corn "salad" and it had chili cheese fritos added at the last minute. It was actually good.

DeleteI haven't had Frito pie since I was a kid, but now you've reminded me about it and I might need to make it one day soon. Can you imagine going over a waterfall in a barrel??? My youngest got engaged at Niagara Falls. I've never been but maybe one day. I've heard it's actually nicer from the Canadian side, at least the town on that side is nicer. Have a great day!

I've been to Niagra Falls and Yosemite Falls, but there was a drought when I was in Yosemite and the falls were dry.

DeleteI've been to Gullfoss in Iceland and Niagara Falls. It's quite an ambitious list of falls and all I can think of the flights to most of them are more than I want to experience. Have a great fall!

DeleteFirst I need to apologize. Losing Leo was so traumatic yet his short life was jam packed with good things and his passing was so peaceful. I sent you an email and I think I was just in a bad place. You must think, oh Lord. I will send a new email but give you a chuckle about some kooky kids I attended school with....hahaha my friend Lynette had me in tears of laughter. ! I LOVE NIagara Falls. I love the USA so the American side was perfect for us to visit in 2020. I was in love and my big brother Bill honeymooned there with Joyce my SIL in 1963. Such a romantic place...sigh. I LOVE Fall! More of it to come if the season holds up as some cooler weather is descending on us. Green chili and roast. My husband and his carrots and potatoes and roast. Oh yum. I will email you or write a novel here. hahaha Summer was rainy than hot and back and forth we went. Glad the cooler weather is here witht he Harvest Moon. Shea says, why is that moon following us!? Falling leaves drive my hubby nuts, but I love them. Where I see beauty, he sees a mess. That recipe sounds interesting.
