How'd it get to be Saturday already? My favorite month of the year's spinning like a ceiling fan in July.
This week's been a series of hits and misses ..... but isn't that the way life goes?
Despite our weather still being disrespectfully warm I've been craving some comfort, one-pot meals. Spying a bag of Tyson chicken breast strips in the freezer, I dumped it in the slow cooker with a box of low-so chicken broth. Sauteed onion and lots of fresh garlic(!) followed, together with a block of cream cheese and green salsa.
Yes, it reads "Very Hot!" ... but having grown up in northern New Mexico, I pretty much 'pooh-pooh' others' definition.
Well boys and girls, this stuff pretty much whammied our taste buds. !Proceed with caution!

At first light Monday, the work next door began in earnest.
And yes, the little kid inside me was enormously entertained.

ReplyDeleteYour new recipe does sound good, except for the hot cheese. I like my food on the mild side. It's going to be awhile before you get over the loss of those trees. I know I miss the large oak tree I had. We now live in a developement with only small new trees. I sure miss the shade and watching the squirrels run up and down it every day. DeleteThat would be a hard NO for me on the Carolina Reaper! "You're a better man than me Gunga Din." *giggle* I'm the kind that thinks table black pepper is spicy enough. Steve, however, loves spicy foods. We're planning on having a homemade keto goulash tonight (a tame version, no spicy kicks) that's more like a Mulligan Stew once we're done adding ingredients. It's a "whatever's in the pantry" kinda goulash. Every time we make it it's unique. 😊

Deletethe heartbreak of watching the trees leave this earth is what I see and also fun fun fun watching the claw thingy working... I see the undersides and all sides of giant stumps every day on our walk. I took a few pics today but it will be a while before they show on Madsnapper. I have sworn off hurricane pics for the next week. will then have a once a week or just a one time photo dump.

DeleteI never heard of that kind of cheese before...thank you for the warning! Yikes! I wouldn't have been able to eat it at all I am certain. Hope you were able to get enough out of it to be worth all the trouble! Now, regarding those trees, etc....I would have been watching as well, camera in hand, but I would have been crying for all the trees, birds, squirrels, etc. You'd think they could've left at least one! I do hope the new neighbors will be good ones after all of that! Praying with you, just as we continue to pray for our new neighbors here, whoever they may be! Change isn't always easy, but we have to learn in life to roll with the punches and accept things we don't always like, for the greater good!

DeleteI bought habanero jack cheese (instead of the usual pepper jack) and WHEWEEE it is HOT. I like a strong kick but am taking this one in thinner slices! LOL I think watching those big machines do their work is interesting too. Wishing you blessings as well, dear friend! xo

DeleteI was thinking of you. My social media pal Jennifer grew up in New Mexico. She lives in Maine these days. One day she said looking out her window at work, a guy drove by on a motorcycle wearing a serape and sombrero. She said, those are my people. Sticking to your keto diet is paying off. I know sugar is bad but I can not physically handle any of the sugar substitutes. Brody gives us quite a workout shagging balls for him as he sits in a chair hitting baskets like a Pro NBA player. He is anxious to get his leg wire removed so he can heal that leg and use it again. Blake is dealing with so much with his precious eye but doctors are great so we trust God will help them fix that right eye. Lots of love to you.
