Good morning y'all! This may well be the most boring post I've published … but figure I need to keep my toes in the pond.
What's new in Coosada?
Some of you spotted Tom on FB ... hard at work on 'his' new fence. The fellow who mows our yard hadn't shown up when I took these pictures … the humidity was something fierce … and I was a nervous wreck, imagining all sorts of crises. (That's what I do best.)
Thankfully, my stubborn old goat Tom stayed hydrated and took lots of breaks. It's going to be a process for sure. But seriously, y'all. We've not lots of disposable income, but I think some things are better left to the younger generation!

Given the unsettling weather and power outages, I was concerned son and DIL wouldn't be feel comfortable driving up Saturday for burgers and brats.
Thankfully, the storm rolled north and we enjoyed a nice visit. Funny aside: DIL prefers her beef cooked 'well done.' That's fine ... some like 'Coke', some want, 'Pepsi.' It's all good.

Unfortunately, Tom's incapable of understanding 'warm, pink center' is not 'well-done.' Looking like his little heart was breaking, he resorted to carrying it in, plopping it down in the (non-greased) frying pan and set the burner to 'high.' (*heavy sigh*)
My mom's salad was a big hit. I didn't realize Lois is practicing the keto diet, so this was right up her wheel-house. I was so tickled when they asked me to make another batch to bring for their BBQ tomorrow!

Since 'someone' abhors green peas ('hate' is an understatement) I omitted those and he's been enjoying left-overs every day since!

While I'm acting all 'Betty Crocker' here … may share an olden family recipe?
Funny how my mind works. A few weeks ago I woke up craving my Grandma Willer's 'East Hampton spread' - something I've not tasted - or thought about - since 1968! Spread on white bread, it was once a staple in both my dad's and my lunch buckets.
Not being able to locate a written recipe -- and unwilling to resurrect my mom's old hand-crank meat grinder -- I improvised from memory. Guess who loves it?
1 pound beef bologna
1 dozen hard-boiled eggs
Small onion
Hellmann's mayo
Dice up the bologna, eggs and onion … throw in mayo (enough to taste) and using both hands squish, squish, squish!
Funny. I reached out to my cousins to see if anyone had grandma's recipe. Only one recalled the ingredients -- totally different than what my mother made! Suppose that occurs in families, when children/grandchildren put their own twists on a dish?

So yes, my 'orange' hair has faded considerably. But that didn't stop me from asking my hairdresser yesterday, "Go easy?"
Here's the result … yay? nay?
I think I like it. At least my roots won't be so noticeable …

DeleteLove your hair and that recipe with the bologna! My mom made this bologna spread with mayo and I'm not sure what else but it was delicious. Remember it years later except I don't think anyone has the recipe :(

Yes, I am! It was good to taste bologna again … so often overlooked. :)
DeleteWe make a similar recipe but keep out the onions. Instead we add boiled potatoes cut into small cubes, also, (sometimes), boiled beetroot cut into small cubes.

DeleteYAY I love, love love the hair color. bob would love the spread recipe, I don't eat onions, but I love egg salad or balonga so why not together. salad sounds good to if someone will make it for me. LOL at the old goat, mine was out in the garage today 99 inside the garage with TWO trucks that had been driven. Chaning the OIL in his truck, laying under it in the heat because he doesn't TRUST the way THEY did it last time. cost was the same of him doing it or THEM doing it... I said I hope the EMTs are strong when they come to drag your body out from under the truck...

ReplyDeleteBoth recipes sound good, but I've never heard of garlic oil before. Considering how much I love garlic, though, I'm sure I'd be a fan of it, too.

To tell the truth, I wouldn't begin to know where to find garlic oil. I just cheat by buying a little jar of the minced stuff … and use it liberally. Very liberally.

DeleteOur bologna recipe was simpler with only dill pickles, ground up bologna and mayo. I loved it and still do. That cauliflower salad looks very good too. Working in this heat is not good. I hope your Tom is taking more breaks than working. Cooler days will come. Hope you have a great 4th of July !

DeleteOh my yout hair is beautiful and you look so gorgeous! It is beautiful! My mom would get the ends of lunch meat from my Uncle Munson at the market and grind that with hard boiled eggs, dill pickles and mix it with mayo. SHe always made a version of it with ham salad after Easter. OH how I love that stuff! YUM! Tom is one of the most hard working retirees I have ever seen, God bless him! Rebecca another blogger married to Steve has a great hubby too. He works at night since the oK heat is hideous like the rest of our country. Hmmm.... I heard it was 57 degrees in SPokane, WA. ! ANyway Steve is putting in a new deck at night. He is a one man DIY guy! HUGS

I forgot to mention, the broccoli/cauliflower salad is best kept in the fridge overnight before serving … letting all the flavors mix n' meld. Hope you like it!
