Good morning from a 15* Coosada,
I'm on my second cup of French roast, but not before opening the curtains to bring God's palette inside. Thankfully -- and in spite of weather warnings to the contrary -- our roads are dry, the sun's shining.
In the Kitchen ...
Night before last I threw together another big pot of chili chicken soup and gotta say, it's darn delicious. One can add or subtract the 'heat' according to individual taste, but here's the process. Easy peasy!
- 1.3# bag of Tyson 'Grilled and Ready" chicken breast strips (this time I used the fajita-seasoned variety) -- preheated/thawed at 70% in the microwave for 6-7 minutes
- 32oz. box of chicken broth (I prefer low-sodium)
- 1/2 lg. onion + 3 garlic cloves, sauteed in butter
- 8oz. softened cream cheese (I added to the saute mix just to hasten the 'softening')
- 16oz. Herdez mild salsa verde
- 2c. Monterrey Jack cheeseFans of 'heat', this is the part you can add a few chili peppers -- or not.
Dump it all in your slow cooker on high for 1 hr. (or low to enjoy 2-3 hrs. later)

I hate to admit it, but my Audible subscription isn't all I'd hoped for. Oh, the selection's great but. I'd either (a) lose an earbud or (b) fall asleep. Back to Kindle Unlimited!
I did, however, pay $16.41 to MyLifeway to stream Jennifer Rothschild's 7-part Psalm 23. While our ladies group already did this study some months ago, it resonated so deeply. Not unlike a favorite movie, this is something I'd like to watch again and again.
Thankful ....
For the little voice in my head that said, "Get up and show up!" (to church) Sunday morning. I love Pastor Janet, but there are times I 'zone out' during the sermon. The guest preacher -- a Career Coach with a local 'Hope Inspired Ministries" group -- was super engaging. Never mind that his message went over the (unspoken) 30-min. mark, I was hoping he'd keep talking!
In brief -- "Change Your Focus" and "Quit looking behind you ... you can't see where you're going."

ReplyDeleteMy husband (the cook) calls the chili chicken soup 'White Chili'. I want to try that version of it. Sounds so good.
I didn't know Lifeway offers streaming! Now I'm going to check it out. I buy one of our Daily Devotionals from them: Journey For Women and Stand Firm (for men). The teach the "meat" (saved by grace) of the Gospel which is what is right and proper. Good people.

DeleteIt's frigid here, too, Myra, and I'm about over it. Glad you didn't get any frozen precip, although a bit of snow might be nice. So far, GA hasn't seen any this winter . . . I keep hoping!

DeleteIt's so cold and damp over here we have a permanent rainbow in the kitchen. A farmer friend of mine says when he milks his cows he gets ice cream. He's feeding them strawberries, raspberries and chocolates for a variety of flavours.

DeleteGreat trip to your house today. However we too are cooler than normal here. About the speaker, in my life time I have heard maybe 4 speakers that were so engaging I could have kept on listening. BUT my daddy said, that is smart man when he quits while you still want more rather than get to the point you feel is enough. sigh

brrrr indeed. I guess I will stop monaing about walking Beau ins 47 degrees with wind this morning. Son David called from TN and said he is in sinlge digits with feels like minus below and my SIL text and said she is 12 with a high of 20 today. now you. Welcome 47 degrees.. it is now our high of 54 with sunshine. the first sun in a week.
ReplyDeleteI buy those chicken strips and keep for when i don't feel like cooking. never though of using in soup.
I always found it difficult to listen even when THEY stopped at 30 minutes. by the 31st minute i was done and heard nothing.
forgot to say, son david has missed 2 days of work without pay due to icy roads, he drives a bus that picks up veterans and takes them to their appointments. they shut down until the ice is gone,
later gator, keep the girls warm and stay indoors.
That's awful about David's job! I have to admit, this Arctic blast affected me more so than in past years. I used to LOVE the cold.
Delete15 degrees is pretty darn cold for Alabama. Last night here in rural Tennessee it was minus 8!!! My teeth (or what's left of them) are still chattering. Save me a cup of French roast!

DeleteI enjoyed this little visit over coffee with you, (make mine tea, please). That chili chicken soup sure sounds good. I made a pot of beef vegetable soup today. It was a good day for soup! It was 32 degrees here this morning and only made it up to 50. But the sun was shining, so we were thankful and even took a walk.

DeleteThanks for sharing the soup recipe. By substituting frozen shredded chicken I cooked a few months ago, I have everything on hand to make it. We are in a soup frenzy right now, and it sounds delicious.

DeleteSadly I don't do as many Bible studies as I once did. I guess I just got lazy. The pandomenic seemed to have taken away my enthusiasm for doing many of the things I usually enjoy. It's time I got out of this slump. I hope to do better in the future! I love speakers that make their speech so entertaining that you want to keep on listening. Not many have a gift for that. Hope you warm up a little soon. That is way too cold for your part of the world. We have warmed up here to 26 degrees right now. It's a lot better than the below O wind chills we were having, but now we have a winter weather advisory for more snow. I'm going to the grocery store some time today. DeleteI better stop while I am ahead. I guess that is why climate change replaced global warming. People freezing everywhere this year. I figure one day God will say enough is enough of this clown show and John McArthur talking about how Jesus will come out of the sky. So prepare to meet Him but if you aren't ready you will be left in the chaos to come. It is something I am getting more calm thinking about . My friend in Tennessee had broken water pipes. Jake drove Hannah's little Toyota with snow tires to work. All the guys with big trucks were in the ditch.The planet finally closed for a few days. Jake had his truck in the shop thankfully. My nephews first wife Brenda moved to Florida. She never dreamed she & Steve would live through a cold front there . My friend in California said when it hit 50 she bought a winter coat. The weather world is a wacky place indeed. Stay safe out there everyone!
