Foodie Friday

 



Some gotta win, some gotta lose! 
... and no, I'm not talking about the bathroom scale.

These crazy hot days we've I've been consuming lots of salads ..... experimenting with random food stuffs.  Here's what happened.


What's not to love about Publix's chubby rotisserie chickens!  This time, I was able to make two goodly-size containers of salad = 6 meals.  I added red onion and hard-boiled eggs to both -- but instead of mayo, I dumped in a generous amount of Marie's bleu cheese dressing. The second, Duke's and curry powder.  (Turns out Mr. "I don't like curry" actually preferred the latter!)


There's never a bad time for loose meat!  I gave this a caprese-ish twist.  Two thumbs up!




Wish I'd heard about making egg loaf in the Instant Pot before making my grandma's 'East Hampton spread.'

That's egg, onion and (all beef) bologna smushed with lots of Duke's.

Not gonna lie, there were a couple epic fails.

When I thought covering Sunday's rib-eye with buttery (canned) asparagus was a good idea.
Delicious, but unsightly



... or thinking salmon in a pouch might be tasty tossed in leafy greens.  Because Tom's not a fan, I've never tried making salmon at home.   Hardly seems worth it for one, ya know?
   
Anyway, I'm curious if anyone's ever used that stuff in a pouch ... and what you use to make it taste less 'yukky.'

So, I'm looking forward to a lunch with Troy and Lois.  Later this evening we're going to try and brave the heat and meet friends at The Rex for some 'Hey Bebe' boubulattas, red beans and rice.

If I'm not in a carb coma, I think tonight's an appropriate time to indulge in an 'Oppie.'

  1. Since Danny's the chief cook around these parts, I don't experiment much with recipes any more, Myra. Reading your post here, I think I just might try to do some "dabbling" this weekend. Of course, I've got to get serious about posting a new blog, hopefully by Monday.

  2. Your salads, etc. all sound pretty doggone good! Mother used to make bologna salad, but no onions in it. I make ham salad, using ground ham, sweet pickle relish, hard boiled eggs (if I have them) and mayo. We mostly use Hellmann's, but lately mayo has been so expensive I used whatever one is on special. It is very hot here this week, with no rain in sight. We are under a high heat advisory today, so staying indoors and keeping cool. We did trek out to Walmart early this morning before it heated up and also before the Friday rush. Glad we were out of there before 10 a.m, as it was already filling up and the temp was almost 90 already. Not sure what we're doing for supper yet. I roasted a pork loin roast last night, and we have a lot of leftovers, so we may have cold pork sandwiches. Take care and stay cool!!

  3. Did the salad include chubby rotisserie chickens and hard boiled eggs? Which one did you put in first, the chicken or the egg?

    The steak and asparagus looks nice to me. All food looks nice except those beans they put in chilli con carne. Why can they make it without the beans?

    I like baked beans with tomato sauce thought. I can add my own chilli powder to it, or even curry powder. Simple meal. A can of baked beans mixed with curry powder and raisins or sultanas, and then spread on toast. Quick and easy.

      Simple meals are often the best. I agree, beans have no business occupying space with chili. I'm impressed you enjoy beans otherwise; they're not so welcome here.

  4. It's HOT in my neck of the woods, thankful for the a/c! We love rotisserie chickens and get them often at our local Kroger store! I can eat them and not feel guilty while on my diabetes diet.

I do use Publix or Walmart rotisserie chickens when i need chicken for something or to feed bob. he loves it, and will if I so desire, just make a sandwich from the white meat, and I store the rest and let him pick the caraccas clean. I find WM chicken is better, Publix has to much gooky fatty stuff in it. but he doesn't care so i buy them anyway. I eat egg salad, made with relish and veggie mayo. the rest of what you had is nothing I would eat. not even the stake. i love aparagus but nix the butter and it doesn't taste as good. cant eat butter. bring on the mac and cheese for me.

    1. I've not tried WM chicken before! Tom's daughter makes asparagus on the grill, lightly brushed with olive oil. Yum!

  7. Oh, they are building a Publix less than a mile from me. I am so excited. Everyone I talk to loves their rotisserie chicken so, when they open, I will have to try it out.

  8. I really like salmon and found the individually wrapped and frozen fillets at Sam's Club. They are easy to make and I usually have Brussels sprouts. I also like canned salmon and make patties with it. Yum!! Happy weekend!

  9. I used to love the frozen salmon fillets from Sam's Club, but it's in Santa Fe and we don't go there to shop any more. We use canned salmon. Not as tasty, but it's easy and healthy.

  11. Salads are refreshing on hot summer days. I eat more of them in the summer too. I love all kinds. You have been doing some really good eating ! I am making a casserole for this weekend. The recipe is in my post for today. Keep cool and enjoy these summer days! Love, ma

  14. I have tried pouch salmon but am spoiled with the real stuff Rebekah and Zach grill for us. We get salad from a little farm that comes to the Farmers Market each Saturday. They are totally organic. Love their salad so much. Do you have Cheddars restaurant's? They make a decent salmon along with Outback and Texas Roadhouse. The Outlack salmon came highly recommended from a server we know that has been with them for a very very very long time. Your salad made me hungry. I was eating Lupine beans for a snack til my husband gets here. Hugs to you and prayers for you both.
